I do not know for certain what you refer to is documented, but I believe we had the same behavior during our mixed environment phase.

If the person sending messages from the "helpdesk" mailbox is using and R6 client (and r6 template), you can set the "reply to" option in
Delivery --> Advanced tab

"Replies to this memo should be addressed to"

You can set this option to the helpdesk address
